Perfect Buttermilk Pancakes

Just hearing the word pancakes makes me want pancakes. I never not want pancakes. But they have to be big, fluffy pancakes with a dot of salted butter in between each and a good amount of warm syrup poured over them. For this recipe, I use 2% milk (Lactaid for me) to make the buttermilk, but you can use whatever you like. I add oatmeal to the whole batter and then split it and add blueberries to one bowl and chocolate chips to the other.

2 cups milk
4 TBSP white vinegar
2 cups flour
4 TBSP sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
4 TBSP melted butter
**optional 1 cup uncooked oats
**optional 1 cup blueberries, or any fruit
**optional 1/3 cup chocolate chips

*measure out milk and add the white vinegar to it. let sit for 5 minutes
*in a separate bowl, combine flour, sugar, baking powder, baking soda, salt
*add eggs and melted butter
*add in milk/vinegar mixture
*drop onto hot griddle greased with butter or cooking spray. flip when you start to see bubbles.

makes about 10-15 pancakes
