Healthy Banana Nut Cookies

To be honest, these aren’t really cookies, they are just cookie shaped. Their texture is more like banana bread. I saw this recipe floating around the internet and tried them, but I was missing the cookie crunch. So I added walnuts and just a few mini chocolate chips. These are a great healthy snack or breakfast option because there is no flour or white sugar (except what is in the chips). These keep about two, maybe three days as they are very moist. Any longer than that and they will start to mold over! This recipe might also work in mini loaf pans – I will try and then update!

3 mashed bananas
1/3 cup unsweetened apple sauce
2 cups uncooked oats
1/4 cup almond or rice milk
1 tsp vanilla
1 tsp cinnamon
1/2 – 1 cup chopped walnuts
1/4 cup mini chocolate chips

*preheat oven to 350
*coat baking sheet with baking spray
*mix all ingredients
*drop by tablespoonful onto baking sheet
*bake for 15-20 minutes
