To be honest, these aren’t really cookies, they are just cookie shaped. Their texture is more like banana bread. Just hearing the word pancakes makes me want pancakes. I never not want pancakes. But they have to be big, fluffy pancakes with a dot of salted butter in between each and a good amount of warm syrup poured over them. For this recipe, I use 2% milk (Lactaid for me) to make the buttermilk, but you can use whatever you like. I add oatmeal to the whole batter and then split it and add blueberries to one bowl and chocolate chips to the other.
