Baked Oatmeal

You will love this baked oatmeal recipe!  If your only experience with oatmeal has been with those little instant packages, you are in for a nice surprise here.  This oatmeal is moist without being mushy and it’s full of flavor.  This recipe will realistically yield about three servings, so if you are doubling it, use an 8×8 pan instead.

Baked Oatmeal

1/2 cup + 1 TBSP milk

1/2 cup sugar

3 TBSP melted butter

1 tsp vanilla

1 egg

2 TBSP canola or vegetable oil

1/2 tsp salt

1 tsp baking powder

1 3/4 cup old fashioned oats (if gluten sensitive, use gluten free oats)

 

*preheat oven to 350

*in large bowl combine all ingredients, adding oats last

*empty contents into a buttered (I use PAM baking spray) loaf pan

*bake for 25-35 minutes (taste at 25 minutes – if you like it drier, bake a little longer)
