Tomato Soup Spice Cake

Like me, my dad has some great memories of foods from his childhood. The tastes and smells take us right back to the loving hands that made those dishes. This tomato soup spice cake recipe is pretty close to the one his mother used to make. Hope it brings back some memories for you!

2 cups flour
1 1/3 cups sugar
4 tsp baking powder
1 1/2 tsp ground allspice
1 tsp baking soda
1 tsp ground cinnamon
3/4 tsp ground cloves (or more if you like it spicier)
1 can (10 3/4oz) Campbell’s Condensed Tomato Soup
1/2 cup vegetable shortening
2 eggs
1/4 cup water

*Preheat oven to 350
*Mix first seven ingredients in a bowl
*Add in the last four ingredients and beat for four minutes
*Pour batter into buttered loaf pan
*Bake for 40 minutes or until toothpick comes out clean
*Cool completely and frost with cream cheese frosting (see post on this site)
