But they have to be big, fluffy pancakes with a dot of salted butter in between each and a good amount of warm syrup poured over them. For this recipe, I use 2% milk (Lactaid for me) to make the buttermilk, but you can use whatever you like. One dish that’s always served is this shrimp in vinaigrette – a recipe I could not leave without. It’s totally tweakable – you can add other fresh veggies you like or use some of the liquid to dress other salads. This can be made to be eaten immediately, but it tastes even better the next day.
